Ingredients: (Yields 1 cup)
1.Preheat oven to 350°F. Cut top of garlic bulb off so that the tips of all cloves are just exposed. Drizzle top with olive oil and place on a baking sheet. Roast the garlic in the oven for 30 - 40 minutes until soft. Remove from oven and let cool to room temperature.
2. Squeeze roasted garlic out of skins into a food processer. Add butter and fresh frozen Parsley. Pulse a few times until ingredients are well blended. Add salt and pepper to taste.
Tips: Try this mixture substituting frozen basil or cilantro to the parsley. Keep on hand in the refrigerator to make a quick garlic bread, add to mashed potatoes, or place a spoonful on a warm steak or chop.
