Italian Frittata
Serves 4-6
Ingredients:
  • 8 eggs
  • 1/4 cup milk
  • 1/2 cup shredded Italian cheese blend
  • 1/2 medium zucchini, sliced
  • 1 medium tomato, diced and seeded
  • 1/2 medium green bell pepper, diced
  • 2 Tbs. frozen Daregal Parsley
  • Salt and Pepper to taste
  • Marinara sauce, warmed
Directions
  • Preheat oven to 350°F. Crack eggs into a large bowl and pierce yolks. Add milk and pepper and whisk until well blended. Add cheese, zucchini, tomato and pepper. Stir. Fold in frozen parsley. Pour mixture into a greased, 9-inch pie pan. Bake for 30 minutes or until eggs are set. Slice into triangles and serve with marinara sauce.
