Pan-Fried Chicken with Cashew Nuts and Cilantro
Main dish, Serves 4
Ingredients:
  • 1 lbs. of chicken
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 2 tablespoons of cashews
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • 3 tablespoons of frozen Darégal Cilantro
  • 3 tablespoons of minced Ginger
Directions
  • Dice the chicken breasts.
  • Heat the olive oil in a high-sided frying pan.
  • Brown the diced chicken breasts.
  • Add the cashew nuts, ginger and diced green peppers.
  • Salt and pepper.
  • Mix well.
  • Simmer for 10 minutes.
  • Sprinkle with cilantro just before serving.
  • This dish can be accompanied with Thai rice mixed with small vegetables.
