Macaroni with Aubergine and Basil mozzarella
Main dish, Serves 4
Ingredients:
  • 3/4 of pasta
  • 1 jar of sun-dried tomatoes
  • 1 eggplant
  • 1/3 lb. of mozzarella
  • 1.75 oz. of black olives
  • 2 tablespoons of olive oil
  • salt
  • pepper
  • 3 tablespoons of frozen Daregal Garlic
  • 3 tablespoons of frozen Darégal Basil
Directions
  • Dice the mozzarella and leave aside.
  • Wash and dice the eggplant.
  • Fry the eggplant and garlic in a pan with warm olive oil.
  • Add the sun-dried tomatoes and the olives.
  • Add seasoning.
  • Simmer for 10 min.
  • Meanwhile, cook the pasta al dente in boiling salted water.
  • Drain them.
  • Mix to the preparation, cooking for 3 minutes.
  • Pour on a serving dish.
  • Add the mozzarella.
  • Sprinkle with basil.
  • Enjoy warm.
