Macaroni with Aubergine and Basil mozzarella
Main dish, Serves 4
Ingredients:
3/4 of pasta
1 jar of sun-dried tomatoes
1 eggplant
1/3 lb. of mozzarella
1.75 oz. of black olives
2 tablespoons of olive oil
salt
pepper
3 tablespoons of minced Garlic
3 tablespoons of frozen Darégal Basil
Directions
Dice the mozzarella and leave aside.
Wash and dice the eggplant.
Fry the eggplant and garlic in a pan with warm olive oil.
Add the sun-dried tomatoes and the olives.
Add seasoning.
Simmer for 10 min.
Meanwhile, cook the pasta al dente in boiling salted water.
Drain them.
Mix to the preparation, cooking for 3 minutes.
Pour on a serving dish.
Add the mozzarella.
Sprinkle with basil.
Enjoy warm.
