Taste of Thailand Chicken Skewers by Mindee

Ingredients:
- Marinade:
- ¼ cup lime juice
- 1/3 cup vegetable oil
- 1 tablespoon fish sauce
- 1 serrano chile, stemmed and chopped
- 2 garlic cloves, coarsely chopped
- 2 teaspoons salt
- 1 pkg. (1.76 oz) fresh frozen cilantro
- 1 pkg. (1.76 oz) fresh frozen basil
- 1/3 cup fresh mint leaves
- 4 skinless boneless chicken breast halves, cut into 1 ½ inch cubes
- Fresh cilantro for garnish
- Dressing:
- ½ cup prepared Sesame Ginger dressing
- 1 tablespoon creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice

Directions
- Prepare barbecue (medium-high heat). If using bamboo skewers soak in water at least 30 minutes. Combine all marinade ingredients in a blender and pulse until well blended. Pour marinade over chicken and refrigerate at least 45 minutes, but preferably overnight. Thread chicken onto metal or bamboo skewers. Grill chicken, turning occasionally, until cooked through and slightly charred, about 10-12 minutes.
- For the dressing, mix all ingredients. Serve chicken over greens with the dressing. Garnish with fresh cilantro sprigs.
