Turkey and Cilantro Kebabs
Main dish, Serves 4
Ingredients:
4 turkey breasts
12 smoked thin sliced bacon wrapped prunes
7 oz. Arugula
4 lemons
1 tablespoon of ground caraway
4 tablespoons of olive oil
salt
pepper
2 tablespoons of Darégal Cilantro
1 tablespoon of minced ginger
Directions
Cut the brests into large dice pieces.
In a large dish, mix the olive oil, the lime juice, the ginger, the cilantro and the ground caraway.
Add the chopped turkey dice.
Season with salt and pepper and mix well so that all the turkey is covered with the marinade.
Leave to stand for 2 hours.
Quarter the limes.
Wrap prunes with bacon.
On the skewers, place the turkey, the prunes and the limes.
Grill on the BBQ or under the oven broil for 15 min.
Serve hot on a bed of rocket.
