Main dish, Serves 4
Ingredients:
8 baby artichokes
1 eggplant
medium zucchini
2 fennel bulbs
1 red pepper
1 green pepper
3 tablespoons of olive oil
pepper
3 tablespoons of frozen Darégal Grilling Blend
Directions
Wash and dry the vegetables.
Cut the eggplant and the zucchini lengthwise.
Shred the peppers.
Cut and quarter the baby artichokes.
Discard the hard bits of the fennels and quarter them.
Brush the oil on the vegetables and let them soak.
Place the vegetables on a BBQ griddle or under the oven grill.
Season.
Cook for 10 min.
Half way through the cooking, turn the vegetables.
Sprinkle with the Darégal Grilling Blend before serving.
Good accompaniment dish for grilled meats or fish.
